Dorinda’s Waffles

Packed with protein and healthy grains, these waffles are perfect for breakfast or a simple dinner.

Ingredients: 4 eggs, separated
2 cups Summerhill Goat Milk
1 ½ cups half and half (you can use Summerhill Goat Milk here too if you prefer)
2/3 cup coconut oil
1 Tbsp. agave nectar
2 cups all purpose flour
1 ½ cups whole wheat flour
2 Tbsp. baking powder
1 tsp Kosher salt
2 Tbsp. flax seed
2 Tbsp. wheat germ

Directions: Beat egg whites until soft peaks form. In a separate bowl, mix wet ingredients (egg yolks, milk, cream, oil and agave.) In another bowl, whisk dry ingredients together (flours, baking powder, salt, flax seed and wheat germ). Carefully pour wet mixture into dry ingredients and stir gently (don’t over mix). Gently fold in beaten egg whites. Bake in waffle iron. Top with fresh fruit, maple syrup or Goat Milk Caramel Sauce. (link to recipe)
